This dish is filled with healthy macros (carbohydrates, proteins and fats), as well as lots of vitamins and minerals. It makes a perfect side dish, snack or meal.
Ingredients:
- 1/2 bag of baby carrots or 2-3 large carrots peeled
- 1 onion
- 1/2 bag of lentils
- 2-3 celery stalks
- Approx. 1 tablespoon light olive oil or other healthy cooking oil
- Spices: salt, paprika, onion powder and parsley
Directions:
Rinse lentils, drain and set aside.
Heat canola oil in pan.
Dice onions, carrots and celery and put in pan. Saute until soft.
Fill pan with water and add lentils. Bring to a boil and then lower heat to a simmer.
Add spices little at a time until desired taste. Cook until lentils have softened. Add water if necessary for desired consistency.

Serving size – approx. 1 cup including 1/4 cup lentils
Each serving is approx. 203 calories, 2 grams of fat, 34 grams of carbs, 15 grams of fiber, 12 grams of protein
